We made amazake, a traditional Japanese sweet drink, into ice cream. The moderate aroma of the amazake, floating lightly in the air, is pleasant. A little bit of “tamari” (liquid run-off from miso preparation), accentuates the flavor.

The red version of “Masuzuka Miso,” which is produced at a traditional miso brewery in Aichi and which is used for MISO 18-KAGETSU’s menus, is available for takeout. It is sold starting at 11:30. It is a natural miso with no additives, brewed in wooden barrels for 18 months, with soybeans as its main ingredient.
