“We would like you to know more about the deliciousness and almighty appeal of miso.” This is a restaurant specializing in miso dishes, opened by the owner, whose parents’ home is a traditional miso brewery in Toyoda City, Aichi Prefecture, established more than 80 years ago. “MISO 18-KAGETSU,” the name of the restaurant, is derived from the fact that “Masuzuka Miso,” a natural miso which has been brewed in wooden barrels for 18 months, is used in all the dishes. Even though it is still a new restaurant (opened in September of 2014), it has already become the topic of the town. You cannot talk about Japanese cuisine, a world heritage now, without talking about miso, one of Japan’s traditional foods. Besides its standard dishes, “MISO 18-KAGETSU” is a restaurant where you can savor novel creative cuisine and get to know the profound appeal of miso.
