What is Okukuji Shamo?
Okukuji Shamo is a special local chicken which is bred freely and relaxedly in an Okukuji mountain village in the northwest part of Ibaraki Prefecture. Okukuji Shamo's blood is 50% that of the fighting cock, and so the quality of the meat is firm and elastic, without much fat.
Uncompromising attitude toward the quality of materials
We buy chickens whole, cut them into parts ourselves, and use only the parts that can be finished up on that day, though in ordinary restaurants, they use everything. We serve only reliable and safe meat. We never use frozen meat.
