There are three types of cattle: male cattle, bullocks and female cattle. Beef from female cattle has a mellower and richer flavor, with a texture that almost melts in your mouth, because the melting point (the temperature at which fat melts) is low. This is why the meat does not have unpleasant fattiness or heaviness in spite of being fine, marbled meat.
